Qatayef Recipe


Ingredients of Qatayef

250 gm all purpose flour
3 teaspoon milk powder
water as required
1 tablespoon lemon juice
5 teaspoon unsalted butter
50 gm pine nuts
1 cup refined oil
430 gm granulated sugar
1 teaspoon dry yeast
1/2 teaspoon baking powder
1 pinch salt
50 gm raisins
50 gm hazelnuts

How to make Qatayef
Step 1
To prepare this recipe, coarsely chop the hazelnuts and using a dry skillet, lightly toast the pine nuts. Now, take a kadhai over a high flame and pour 2cups of granulated sugar along with 1 cup of water and the lemon juice. Heat it up so the sugar melts completely, if not, give it a little stir to help the process.

Step 2
Bring the mixture to a rolling boil and then reduce the heat. Allow it to simmer for 10 minutes, or until the syrup is of a pancake batter consistency. Don't let it simmer for longer or it'll turn thicker and the syrup will get ruined. Then, transfer to a bowl and allow it to cool down.

Step 3
Now, take a large bowl and add flour, milk powder, baking powder, yeast, salt, and one tablespoon of sugar. Pour 200ml of warm water and whisk the mixture till no lumps remain. Then, gradually, add another batch of 200ml water and whisk till the batter is of a pancake batter consistency. Cover the bowl with plastic wrap and set aside for 45-50 minutes or until bubbles start appearing.

Step 4
Next, take a griddle over medium flame and allow it to heat up. Drizzle a few drops of oil when hot and wipe it with a paper towel to grease the griddle. Using a small ladle, stir the batter and transfer to the griddle to form little pancakes. (Prepare pancakes that are 3-4inches in size)

Step 5
Allow them to cook till one side is light brown and the other is filled with little bubbles. Do not flip the pancake, only cook from one side till the other side is no longer wet. Repeat the process till you use up all of the batter. Place the cooked pancakes on a plate, do no stack them up, and allow them to cool down completely. (Cover with a plastic wrap while it cools down)

Step 6
Meanwhile, in a small bowl, add the hazelnuts, raisins and pine nuts (you can opt for other nuts that you like) along with the remaining 1 1/2 tbsp of sugar, and butter. Mix them till everything is coated well. Now, take a spoonful of the mixture and place it on the pancakes' bubbly side. Do not overfill, just enough so the pancakes can be closed without falling apart.

Step 7
Then, fold the pancakes in half and close the edges by pinching them firmly. Now, take a frying pan over medium flame and heat oil in it for frying. When the oil is hot enough, add the stuffed pancakes in the oil and fry till they are golden and crispy. Transfer the fried Qatayef to a plate lined with absorbent sheets.

Step 8
Finally, dip the Qatayef into the sugar syrup you prepared earlier and toss them around to coat them properly. Transfer them to a serving plate and garnish with chopped nuts. Enjoy the delicious Qatayefs!
