Ingredients of Broccoli and Spinach Soup

2 onion
6 cup vegetable broth
1 potato
1 tablespoon parmesan cheese
4 tablespoon butter
150 gm broccoli
5 cup spinach
salt as required

black pepper as required

How to make Broccoli and Spinach Soup

Step 1
Start by washing the spinach leaves under water.Pat dry them using kitchen towel and chop the spinach leaves in a medium bowl. Now, on a chopping board chop the onions, potatoes, broccoli and keep them aside. Place a large pan over medium flame and once it's hot enough add butter in it.

Step 2
When butter starts to melt, add chopped onions and cook over medium flame till they are translucent. Sprinkle salt and pepper over it now. Then add vegetable broth and stir to mix the ingredients well. Add broccoli florets, and chopped potatoes in the pan.

Step 3
Cook the mixture over medium flame for a minute or two. When vegetables appear cooked add spinach leaves in the pan and stir well. Cook it over medium flame for 5-7 minutes, stirring occasionally. When vegetables are properly cooked remove from flame and let it cool.

Step 4
After sometime, transfer this mixture to a blender jar and blend it on high speed for a few seconds to make a smooth puree. Transfer soup to a serving bowl and sprinkle black pepper over it. Garnish with parmesan cheese and serve hot.
