Basil Chicken Coconut Curry Recipe
Ingredients of Basil Chicken Coconut Curry

1 kilograms chicken thighs
10 cloves chopped garlic
3 chopped jalapeno
500 ml coconut milk
4 sprigs basil
1 teaspoon coriander powder
1/4 teaspoon powdered clove
1/2 teaspoon powdered green cardamom
1/2 teaspoon cayenne pepper
2 large onion
2 tablespoon grated ginger
4 tablespoon ghee
2 tablespoon lime juice
salt as required
1 teaspoon cumin
1/2 teaspoon cinnamon
black pepper as required
1 teaspoon turmeric

How to make Basil Chicken Coconut Curry

Step 1
To prepare this flavorous curry, first, dice chicken thighs into 1- inch cubes neatly and keep aside. Then, take a small sized bowl and mix salt, pepper and chili powder in it. Now, coat each diced chicken properly with the prepared spice mix. Once you are done with coating of each cube separately, cover them and let them rest for an hour at least.

Step 2
Now, take a medium sized non-stick pan and place it on medium flame. Add some ghee in it along with cumin seeds, clove and cinnamon. Then, add onion, chopped basil, garlic, cardamom powder, turmeric, jalapeno, cayenne pepper, coriander powder and stir for next 3-4 minutes. Cook onion until translucent. Next, add the diced chicken and cook for 5-7 minutes. Meanwhile, whisk the coconut milk with the help of a whisker.

Step 3
After a while, add whisked coconut milk in the pan. Then, add ginger and stir the mixture for 2-3 minutes.

Step 4
Once the curry has cooked well, transfer it to the serving dish. Pour lemon juice over it, garnish with basil leaves and serve hot.
